New York State Apple Muffins

Topping: Combine topping ingredients and set aside | |

Directions: Pre-heat oven to 375 degrees. Combine flour, salt, spices, baking soda, set aside. Combine apples, raisins, walnuts, eggs, cream cheese, butter and vanilla. Add dry ingredients, a little at a time to the apple mixture. Stir until just combined. Do not over mix. Portion batter into muffin, sprinkle with topping. Bake 20-30 minutes. Yield: 24 muffins. |
Wilkens Favorite Apple Pie

Directions: |
Prepare pie crust and line bottom of 9-inch pie plate. In a mixing bowl, mix together apples, sugar and cinnamon. Pile high in bottom crust. Dot with butter Moisten edge of bottom crust and gently place top crust over top. Pinch edges together and flute, if desired. Brush top crust with whipped egg white and spread with l Tbsp. sugar. Cut 5 or 6 vent holes in top. Bake @ 450F for 10 minutes; then 25 to 50 minutes @ 375F until juice starts bubbling through crust. Remove from oven. Serve warm or cold, with ice cream or cheddar cheese. Our favorite apple pie varieties: Baldwin, Northern Spy, Winesap, Greening, and Golden Delicious (use less sugar). |
Wilkens Savory Applesauce

Directions: |
Core apples and cut into eighths; do not peel. Place in saucepan with cider. Simmer, stirring often, until apples are soft. Process through food mill or press through sieve. Add cinnamon and sugar, one tablespoon full at a time, to taste. Chill. Yields about 4-1/2 cups |

Red-skinned apples impart a nice rosy color to the applesauce. Our favorite applesauce is made of a mixture of several apple varieties, including Pippin, Gravenstein, McIntosh, Cortland, Baldwin, Winesap, Golden Delicious and Ida Red. Applesauce freezes well, and makes a nice frosty fruit pop for summer treats! |
